Coconut Oat Protein Pancakes

Pancakes are a staple breakfast food around our home. I make and freeze batches for the week at least every other weekend. I recently had a follower request pancakes without almonds. So I played around and created these yummy breakfast treats.  

 

 

 

I am always searching for kid friendly foods that pack a nutritional punch. These pancakes have all the things with out processed sugar. Carbohydrates, protein and healthy fats are there to insure these last till lunchtime. 

 

 

 

 

Gluten & Dairy Free Coconut Oat Protein Pancakes

 

1/2 cup of GF oat flour

1/4 cup of coconut flour

1 1/2 tsp of baking powder

pinch of salt

1 scoop of Tone it Up Vegan Vanilla Protein Powder

1 tsp of vanilla extract

5 eggs

1/4 cup of melted coconut oil

5 drops of liquid stevia

3/4 cup of nondairy milk

 

 

  1.  Combine oat flour, almond flour, baking powder, salt, and vanilla plant based protein into a mixing bowl. Mix to blend dry ingredients.

  2. In a separate bowl combine eggs, coconut oil, milk, stevia, and vanilla extract. Wisk until completely blended.

  3. Add wet ingredients to dry and mix together with large wooden spoon.

  4. In a large lightly greased skillet, pour ¼ cup of batter into pan. Pancakes should be about 3 to 4 inches in diameter and spaced an inch apart.

  5. Cook until golden brown.

  6. Serve with yogurt, syrup, honey, nut butter, fruit, or a topping of your choice. Enjoy!
