Strawberries and Cream Steel Cut Oats
It's summer time and the strawberries are readily available in stores. I have found organic strawberries for great prices at Whole Foods and Costco. These summer berries are a favorite in our home so any recipe that includes them is a winner.
This morning I was craving steel cut oats and not the sweet and savory apple cinnamon variety. Having fresh strawberries in the refrigerator gave me an idea. Do you remember Strawberries and Cream oatmeal from your childhood? My mom would by the variety pack and it was on of the flavors. I was off to create my own Strawberries and Cream Oats. I'm gigging because my Mom still reminds me of how much I loved oatmeal as a child. HA!

Steel cut oats take a while to soften on the stove so I used my Instant Pot. Any pressure cooker will do and steel cut oats can also be made in a crock pot. Any way you decide to make these oats will work, it's just a matter of time and availability.
Strawberries and Cream Steel Cut Oats
1 cup of steel cut oats
1 cup of nondairy milk + 1/4 cup when finished cooking
2 cups of water
1 tbs of flax meal
1 tbs of chia seeds
pinch of salt
1 cup chopped strawberries
4 oz of Kite Hill's plain cream cheese
2 tbs of maple syrup
In an Instant Pot or pressure cooker, spray non-stick spray in the liner.
Combine oats, milk, water, flax, chia and salt.
Safely seal the lid on the pressure cooker and close vent.
Set pressure cooker to manual high for 13 minutes.
Safely remove pressure from the cooker.
Remove the lid and stir.
Add ¼ cup of nondairy milk, chopped strawberries, cream cheese and maple syrup
Mix well and serve.
