Cayenne Watermelon Gazpacho

My hubby and I went to dinner at our favorite restaurant in Destin, FL, Vin’tij, for his birthday dinner last week. This place doesn’t disappoint, ever. They are located in a very unassuming shopping center near the Silver Sands Outlet in Miramar Beach, FL. This place is a local treasure of the best of what can be done with the freshest foods around.

 

This evening Vin’tij offered a Cayenne Watermelon Gazpacho. Tim ordered a bowl as a starter and we were wow’ed!  Tim took one bite and said, “Honey, you have to figure this one out. I’ll get you a spoon.” We cleaned the bowl and I studied the gazpacho’s flavor profile. Did I land it exactly, no, I didn’t. My Cayenne Watermelon Gazpacho is different and enough the same. Tim loved it, and really, that’s all that matters, right?

 

 

 

I have some ideas after this recipe on how I might continue to develop the recipe and still, I wanted to hand it off to you all to enjoy. Making gazpacho is like making a smoothie. A high-powered blender is all you need. I use my Vita Mix. It whips these veggies into a smooth consistency that makes it edible though a small straw.

 

Cayenne Watermelon Gazpacho

 

5 cups of seeded watermelon + finely chopped watermelon for garnish

1 pealed cucumber + finely chopped cucumber for garnish

1 stalk of celery

1 red bell pepper

1 garden ripe tomato

¼ sweet onion

1 tsp of fresh basil + fresh basil for garnish

½ juice of a lime

3 tbs of Red Wine Vinegar

¼ tsp of cayenne pepper

Salt to taste

 

  1. Combine first 9 ingredients in a high-powered blender.

  2. Blend on high until pureed.

  3. Add salt to taste.

  4. Add 1/8 tsp of cayenne pepper to start. Taste. Add remainder for extra spice.

 

Garnish with finely chopped watermelon and cucumber or microgreens.

 

 

 

I will admit that I added more cayenne than ¼ tsp and it’s a good stopping point. If your taste buds are custom to spicy foods go for it at your own risk! Enjoy this delicious gazpacho as an appetizer to any summer meal or on its own to cleanse your palate. 

 

This recipe is completely Gluten and Dairy Free!  And all the other goodness of Vegan.
