GF/DF Chocolate Cake Donuts with Chocolate Glaze
Happy Black Friday! I am so not a shopper. I used to be. Does this make me in shopping recovery? If you are, I hope you get the deals you are wanting and go out and find a donut pan they are so fun!
With their rich chocolate color these beauties are our Black Friday Chocolate Cake Donuts with Chocolate Glaze. Here is my dilemma, cake at birthday parties when my daughter is dairy intolerant and I am gluten intolerant. I always make some treat for Helena to have while the other children enjoy cake. Can you imagine her sitting there with nothing? It’s too much for my heart to handle so I just whip something together and in a pinch, I have a go to favorite go-to boxed chocolate cake mix. It’s by Simple Mills. You can read each of the simple ingredients clearly on the box and you will know what they are.
I made the chocolate cake batter per the recipe on the box and filled my donut baking pan with the batter about ½ full in each. Thankfully I did consider how thin the donut rings are and reduced the cooking time to 12 minutes. They were perfect at this temperature.
After the donuts were cooled I coated the middle of the donut sandwich with a chocolate glaze and topped 2 with roasted pecans for Tim and I and one with sprinkles for Helena.
The donuts were a hit at the party, too pretty and good not to share and to give a high-five to Simple Mills for a boxed product that’s really good!

Nondairy Chocolate Glaze
½ cup of Enjoy Life Mini Chocolate Chips
1 tbs of coconut oil
2 tbs of coconut milk
Over a double boiler, combine all ingredients in the top pot and whisk until fully melted and the mixture arrive at a creamy consistency.
That’s it! You can use this glaze for anything you like. From cupcakes to chocolate covered strawberries this glazed has it covered.
