Soft Egg and Greens Toast
It’s Toasty Tennis Tuesday! Today’s toast is nothing short of amazing. It’s a protein and greens packed breakfast that will keep you going for hours. And I’ll need it on the courts.
This soft boiled egg is a new one for me but I think I am in LOVE. The perfect time is 6 minutes in boiling water followed by an ice bath before pealing. I truly could eat a soft egg yolk on toast every day. This breakfast is so quick. Make sure you have the ingredients on hand and go for it tomorrow morning.
Soft Egg & Greens Toast
1 toasted piece of GF bread
Kite Hill Almond Milk Cream Cheese
½ of a mashed avocado
½ cup of chopped fresh spinach
1 Soft Egg
Layer from the bottom: bread, cream cheese, mashed avocado, spinach, Cajun seasoning and break that soft egg on top. Oh my… this is my idea of a “broken egg.”
