Cucumber, Hummus and Radish Sandwiches

Toasty Tuesday is surely becoming my favorite day of the week!  I really don't "allow" myself to eat bread often and when I do it's a real treat.  There are some good Gluten & Dairy Free bread options out there.  My favorite is Canyon Gluten Free Bakehouse.  It's easy to find at Whole Foods Market. Canyon Bakehouse has been extending their offerings so keep an eye out for them.  I have only ever seen their products on the shelf once as they are mostly kept in the freezer section. 


This sandwich was so simply delicious with toasted bread, prepared hummus, sliced cucumber, radishes, green onions and basil.  


Assemble and serve.  This would be amazing along side of your favorite soup.
