Creamy Black Eyed Peas and Carrots

Wow weeeeee what a week! Tonight has really been the first night of the week that I had time to prepare a meal that I can be proud of to serve my family. We’ve been on the go and staying home tonight with family is just what we needed. My husband says he wants to do as little as possible on weekends and I hope that’s just what’s ahead.

Of course we have my 4-year-old nephew’s soccer game tomorrow but that is always fun, kid friendly and offers humor. It is quite amazing how many little ones to bigger ones will be running around the Youngsville Sports Complex to participate in the game. I guess if you want them to have the opportunity to play as high schoolers they have to start early and 4-year-old soccer does not disappoint. Which way is the goal? You see parents coaching and pointing from the sidelines and kids looking at their parents running full force not looking where they are going. Good thing they wear some protective gear.

On the menu tonight was an old family favorite comfort food black eyed peas and brown rice. There was once a time when black eyed peas were reserved for New Year’s Day to bring about good luck the upcoming year but not at this house. We love the creamy soothing taste and texture they offer. Not to mention, black eyed peas are beneficial for us O blood types.

1 sweet onion chopped fine

1 green bell pepper chopped fine

3 cloves of garlic chopped fine

2 tbs of avocado oil

1 very finely chopped carrot

2 lb bag of fresh frozen black eyed peas

1 32 oz container of Vegetable Broth

1 tsp of salt or to taste

1 tsp of unsalted Cajun Seasoning

1 tsp of dried basil

  1. In an instant pot on sauté, add oil, onion, bell pepper, and garlic. Sauté for 10 minutes until veggies begin to soften

  2. Add peas, broth, salt, Cajun Seasoning

  3. Set instant pot manual high for 40 minutes

  4. Safely release pressure and add carrots

  5. Return instant pot on sauté. Add carrots, basil, any additional salt you prefer

  6. Continue cooking and stirring until the carrots are cooked

  7. Serve as is or over prepared brown rice
