Chocolate Chip Banana Bread
We are just getting home tonight from visiting Estes Park, CO. What a beautiful place!! We went to the Rocky Mountain National Park and saw beautiful views and wild life. We even had to stop for an elk crossing. Literally, elk crossing the road and taking their sweet time. It was a lot of fun.
I admit after the fun was over and it was time to come home, I was so ready to get back in my kitchen. I like my food. It’s that simple. I was craving something sweet and with 3 ripe bananas on the countertop, banana something was bound to happen. I whipped up a Chocolate Chip Banana Bread and that did the trick! It’s delicious and it is plenty sweet with only bananas and chocolate chips.
3 ripe bananas
4 tbs of melted coconut oil
3 eggs
1 tbs of vanilla
1 cup of almond flour
½ cup of coconut flour
4 tbs of flax and chia blend
1 tsp of baking soda
1 tsp of baking powder
½ tsp salt
½ cup of Enjoy Life chips
Topped with slivered almonds
Preheat oven to 350 degrees
Line a loaf pan with parchment paper and lightly spray nonstick cooking spray
In a blender, blend ripe bananas, coconut oil, eggs, and vanilla.
In a mixing bowl, combine almond and coconut flours, flax and chia blend, baking soda, baking powder, and salt. Mix well.
Pour wet ingredients into dry and mix.
Add chocolate chips and fold.
Pour batter into prepared loaf pan and top with slivered almonds
Bake for 25 minutes
Let cool before removing.
Remove, Slice, Serve
