Paleo Apple Cinnamon Biscuits
The cooler air has arrived in South Louisiana. My doors are open in the mornings and there is nothing like the cool air coming in the house while the baking something with fall flavors in the oven. These Paleo Apple Cinnamon Biscuits didn’t disappoint. They are made of solely of nut flours so don’t expect a super fluffy consistency. The flavor profile is soft and offers a hint of fall just like these cool mornings.
Here’s what you need:
2 cups of almond flour
1/3 cup of coconut flour
2 eggs or egg substitute
½ tsp of salt
½ cup of apple sauce
½ tsp of cinnamon
½ tsp of baking soda
2 tbs of melted coconut oil
2 tbs of maple syrup
Topped with sliced almonds

Preheat oven to 350 degrees. In a large mixing bowl, combine almond flour, coconut flour, salt, cinnamon, and baking soda. Mix well. Add eggs or egg substitute, apple sauce, coconut oil and syrup to the dry mixture and stir well. Let the combined mixture sit about 5 minutes to insure the coconut oil has absorbed all of the moisture it can. Stir again. Prepare a baking pan lined in parchment paper.
Taking handfuls of the dough roll the mixture in a ball then flattened the ball to a biscuit shape. This recipe makes 6 large biscuits. Bake for 15 minutes at 350. I topped mine with sliced almonds and served with strawberry coconut jam. Delicious and they are paleo! To me paleo baked goods are the hardest to achieve.
