Fall Grilling

With fall on my mind, how about grilled carrots, apples and sweet onions? . This dish was delicious, pretty and so easy to prepare. Bring on the pumpkins, spice and the gumbo! . You will need a griddle to put in your gas grill. I prefer cast iron. . You need: A bunch of carrots An Apple A sweet onion 2 tbs avocado oil Cajun Seasoning @purelycajun . Clean and slice carrots in to long thin pieces, cut the apple into slices, and slice onion into rings. These cuts do not have to be fancy, perfect or close to even, just go for it! Pour apple and veggies in a ziplock and add avocado oil and 1/2 tsp Cajun seasoning. Shake mixture around coating all sides. . Lite your grill and turn to medium heat and put griddle inside. Once hot, pour the mixture on the griddle and let the sizzling begin. Keep an active stir or repositioning of the mixture until the onions are caramelized and the carrots have a crisp outside with a soft inside. For my grill this was about 15 minutes. Remove and serve. Grilled carrots are my new favorite! Who knew they could be so sweet??
